This amazingly simple and satisfying soup is a must whether you’re on a cleanse or just craving something comforting, healthy, and delicious. Best of all, you don’t need a huge grocery list of ingredients to make this soup. Literally, it’s just four ingredients and some spices, and you’re in business!
1 (2 to 3 pound) butternut squash
2 tablespoons olive oil
1 medium onion, chopped
6 cups chicken stock (or vegetarian alternative)
Salt and freshly ground black pepper
Cut squash into 1-inch chunks. In large pot, sauté chopped onion with olive oil until the onion translucent, about 8 minutes. Add squash chunks and stock. Bring to a simmer and cook until squash is tender, about 15 to 20 minutes. Remove squash chunks with slotted spoon and place in a blender and puree. Return blended squash to pot. Stir and season with nutmeg, salt, and pepper to taste. Enjoy!
